Ingredients
  • 2tbsp olive oil
  • 3 large sweet potatoes
  • 1 leek
  • 1 Small onion (chopped)
  • 3tbsp Chopped coriander
  • 3tbsp Chopped fresh gingerUse generously (anti inflammatory)
  • Home made hot sauceTo taste
  • SaltTo taste
  • 2cans Red beans
  • 1 kettle of hot water
  • 1tsp ground cumin
Instructions
  1. Peel sweet potatoes, wash and cut into rough cubes.
  2. Chop leeks, onions, ginger, coriander and set aside.
  3. Heat oil in a large pot (I used my wok because it’s one of my biggest). When hot, add onions, ginger and leeks and saute for about 3 minutes. Toss in the sweet potatoes and stir altogether. Add the kettle of hot water and red beans and cover on a medium high to let it bubble away.
  4. When the sweet potatoes are soft, add salt, coriander, cumin and home made hot sauce.
  5. Using a hand blender, whizz the contents leaving the odd bits. Remove from heat.
