You know how I love to stir fry my vegetables! But today I thought I might do something different (break my diet, but it was worth it!). A creamy spaghetti with oyster mushrooms, broccoli, and pak choi ….. I can’t tell you how good it is!
If you’re not up for breaking your diet you can easily recreate this with courgette spaghetti or konjac (low carb) noodles.
It’s a comforting dish for those days when you need a little pick-me-up. Let me know if you try it!
